Mexican Lasagna

Think of this as lasagna with a taco-night twist. Layers of crispy corn tortillas, tender shredded chicken, creamy salsa filling, and plenty of melty cheese come together in one cozy casserole. It’s easy to assemble, full of familiar flavors, and perfect for a busy weeknight.

The “Cheesy & Layered” Mexican Lasagna

When you’re tasked with whipping up a comforting Mexican-inspired meal for a healthy, “easy-to-make” family dinner, sometimes the best solution is to layer it all in a casserole. This Mexican Lasagna uses corn tortillas, shredded chicken, chunky salsa, and melty cheese to create a hearty bake right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another slice” through bites of cheesy, comforting goodness!

Why This Recipe Wins

  • Chicken Power: By incorporating shredded chicken and savory cheese directly into the layers, the dish provides a “filling and tasty” comfort meal with zero hassle.
  • Dinner Surprise: Moving away from a “standard tedious routine” of basic weeknight tacos turns dinner into a “special holiday” fiesta.
  • Naturally Creamy: Blending sour cream and cream cheese cubes with the salsa provides a “rich yet robust” center that bubbles to perfection.
  • Crowd-Pleasing Ease: These “kid-approved portions” are incredibly easy to layer and serve, making them an ideal choice for feeding a group or packing in school lunches.

What You’ll Need

  • The Pasta Swap: Corn tortillas to replace traditional lasagna noodles (par-baked for structure).
  • The Hearty Filling: Cooked and shredded chicken breast (rotisserie chicken saves major time!), plus your favorite chunky mild salsa.
  • The Creamy Binder: An egg, milk, sour cream, and cubed cream cheese to hold the filling together.
  • The Fresh & Cheesy Finish: Fresh cilantro, scallions, and a generous heap of shredded Mexican cheese blend (or Monterey Jack and Cheddar).

How to Make It

  • The Tortilla Toast: Par-bake the corn tortillas on an oiled baking sheet at 350°F for 8-10 minutes so they are primed to hold the filling and get “perfectly crisp” instead of soggy.
  • The Creamy Mix: Whisk the egg, milk, sour cream, salsa, shredded chicken, cream cheese cubes, cilantro, scallions, and salt in a large bowl, combining them “thoroughly, but gently.”
  • The Base Layer: Arrange half the par-baked tortillas in the bottom of an oiled 7×11 baking dish, spreading half the chicken mixture and cheese until the layer looks beautifully “velvety smooth.”
  • The Final Stack: Repeat the layers with the remaining tortillas, chicken mixture, and cheese, baking uncovered for 35 minutes until the top is a gorgeous “golden-brown.”
  • The Plate: Let it cool slightly to set, then slice and serve for a hearty, “mess-proof” masterpiece!

Get the Kids Involved: The “Lasagna Squad”

Since layering tortillas and sprinkling cheese is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Tortilla Placers.” They can help arrange the par-baked tortillas in the bottom of the dish, practicing their “precision.”
  • Ages 6–9: Have them help as “The Cheese Sprinklers.” Show them how dusting the layers with Mexican cheese blend creates a “scrumptious” and melty center.
  • Ages 10+: Let them lead the “Mixing Bowl.” Under supervision, they can whisk the egg and stir the creamy chicken mixture, looking for the “magic bubble” once the lasagna bakes in the oven.

Tips for Success

  • Par-Baking is Crucial: If you skip baking the tortillas first, they will absorb too much liquid. Par-baking them for 10 minutes is imperative to achieve that “tender and rich” layered texture without turning into a soggy mess.
  • Make-Ahead Matters: The goal is a stress-free dinner, so assembling the lasagna up to a day ahead of time ensures the meal stays “refreshing and light” on your to-do list for tomorrow.
  • The Freezer Trick: One can make a “huge batch” by freezing a second assembled lasagna (either before or after baking) to have ready for busy nights.

Lunchbox Note: Put leftover slices in your kid’s school lunch with some avocado slices! It makes repurposing dinner into a midday meal a “quick and easy” win that they will love.

  • Variation: For a “decadent and indulgent” twist, swap the chicken for ground beef, or add sautéed bell peppers, black beans, and diced jalapeños to elevate the flavor profile even further.

Serve & Savor

The Mexican Lasagna is a “tantalizing taste sensation” that proves easy casserole dinners can be “out of this world” delicious. It’s a “versatile” recipe that turns rotisserie chicken and tortillas into a “memory-making” family favorite.

Ingredients

Scale
  • Cooking oil spray
  • 6 corn tortillas
  • 1 large egg
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup mild chunky salsa
  • 1 pound cooked chicken breast, shredded
  • 4 ounces cream cheese, cubed
  • 2 tablespoons fresh cilantro, chopped
  • 3 scallions, chopped
  • 1 teaspoon kosher salt
  • 2 cups Mexican cheese blend, divided
A blend of Monterey Jack and mild Cheddar also works well.

Instructions

1. Crisp the Tortillas

Preheat the oven to 350°F.

Lightly spray a baking sheet with cooking oil. Arrange the tortillas on the sheet and spray the tops with a little more oil.

Bake for 8–10 minutes, until slightly crisp. Remove from the oven and set aside.

2. Make the Chicken Filling

In a large bowl, whisk the egg.

Add the milk, sour cream, salsa, shredded chicken, cream cheese, cilantro, scallions, and salt. Stir until everything is well combined.

3. Build the Layers

Lightly spray a 7×11-inch baking dish with cooking oil.

Arrange half of the par-baked tortillas across the bottom of the dish. Spoon half of the chicken mixture over the tortillas, then sprinkle with 1 cup of the cheese.

Add the remaining tortillas, followed by the rest of the chicken mixture and the remaining cheese.

4. Bake Until Bubbly

Bake the lasagna uncovered for 35 minutes, until the filling is hot and the cheese is melted.

Let it sit for a few minutes before slicing and serving.

Notes

  • Don’t skip the par-bake: Giving the tortillas a few minutes in the oven first helps keep the finished layers from becoming soggy.
  • Use cooked chicken: Leftover roasted chicken or rotisserie chicken makes this even faster to assemble.
  • Keep the layers even: Spread the chicken mixture across each tortilla layer so every serving gets a little of everything.
  • Let it rest: A few minutes before slicing makes the layers easier to serve.
