​Winter Farmers Market Salad

We love a big, fresh salad with dinner! This winter farmer’s market salad is a refreshing and crisp accompaniment to any meal. One week during Catherine’s weekly trips to her local farmer’s market, she found a vendor who sells every type of nut imaginable, and she immediately purchased the candied walnuts when we saw them.

The sweetness and crunch from the walnuts balance out the tart pomegranate seeds, and tangy goat cheese. You can serve this salad with your favorite salad dressing, but we love a nice balsamic vinaigrette with this one.

  • 4 cups arugula
  • 1/2 cup pomegranate seeds
  • 1/2 cup candied walnuts
  • 1/4 cup crumbled goat cheese


  • Place all ingredients in a large salad bowl and toss to combine.
  • Drizzle with your favorite salad dressing. Balsamic vinaigrette is perfect for this salad.
