The main ingredient in these Coconut Chia Seed Pudding is chia seeds which are a superfood packed with omega fatty acids, protein, and fiber. The Chia Seeds are soaked in coconut milk which makes them easier to digest.

Coconut Chia Breakfast Pudding
- 1/3 cup whole chia seeds
- 2 cups coconut milk
- 2 tbsp honey
- Shredded coconut
- Chocolate chips
- Place all of the ingredients in a bowl and whisk to combine.
- Divide between 4 jars or bowls and add desired toppings.
- Refrigerate overnight.
