Late Summer Smoothie

With summer coming to an end, we’re focusing on enjoying late summer’s fruits and veggies as much as possible. Our favorite easy ways to make the most of the late harvest is to roast fresh veggies and make salads with ripe cucumbers and tomatoes.

And because One Potato is known for our smoothies, we wondered what we could whip up using our latest farmer’s market finds. Read on for a yummy smoothie recipe that combines the freshest late summer ingredients – corn, watermelon, and blackberries.

Late Summer Smoothie

Prep Time 5 mins

Ingredients
  

  • 1 cup watermelon
  • 1 ear raw corn, kernels removed
  • 1/2 cup frozen blackberries
  • 1 tbsp chia seeds
  • 3/4 cup milk of choicie

Instructions
 

  • Place ingredients in a blender.
  • Puree until smooth.
