Rainbow Yogurt Popsicles

In some states, it’s already starting to feel like summer. And after kids come in from playing outside, they’re usually begging for something cool to eat or drink. As parents, we want to make sure our kids reach for a nutritious, yet fun treat to fill their bellies with a good-for-you snack, so we made Rainbow Yogurt Popsicles.

Not only are they gorgeous to look with all of the vibrant colors throughout, but they’re made with superfoods like acai and spinach as well as mango, blackberries, raspberries, and pineapple.

These Rainbow Yogurt Popsicles are a really fun activity to prepare with your kids, so get them in the kitchen to make and eat them with you!

Rainbow Yogurt Popsicles

Ingredients
  

  • 32 oz plain or vanilla yogurt
  • 1/2 cup raspberries, fresh or frozen and defrosted
  • 1/2 cup mango chunks, fresh or frozen and defrosted
  • 3/4 cup pineapple chunks, fresh or frozen and defrosted
  • 1 1/2 cups fresh spinach
  • 1 cup blueberries, fresh or frozen and defrosted
  • 1/2 cup blackberries, fresh or frozen and defrosted
  • 1 pack acai, defrosted

Instructions
 

  • Place raspberries and 1/2 cup yogurt in blender and puree until smooth. Divide evenly between 12 large popsicle molds and freeze for 5-10 minutes.
  • Place mango and 1/2 cup yogurt in blender and puree until smooth. Pour on top of raspberry mixture in popsicle molds, and freeze for 5-10 minutes.
  • Place pineapple and 1/2 cup yogurt in blender and puree until smooth. Pour on top of mango mixture in popsicle molds, and freeze for 5-10 minutes.
  • Place spinach and 3/4 cup yogurt in blender and puree until smooth. Pour on top of pineapple mixture in popsicle molds, and freeze for 5-10 minutes.
  • Place blueberries and 1/2 cup yogurt in blender and puree until smooth. Pour on top of spinach mixture in popsicle molds, and freeze for 5-10 minutes.
  • Place blackberries, acai and 1/4 cup yogurt in blender and puree until smooth. Pour on top of blueberry mixture in popsicle molds, and freeze for 5-10 minutes.
  • Place popsicle sticks in molds and freeze overnight.
