Homemade granola goodness Megan Sheley style. Vegan, yummy and healthy with no added sugar, these granola bars will keep your kids happy at lunch and you when you're feeling snacky.
Ingredients
2.5 cup quick oats
1/2 cup crushed cashews
3/4 cup creamy peanut butter (or almond butter)
1/3 cup + 2 tbsp of honey
2 tbsp coconut oil, melted
1 tsp cinnamon
pinch of salt
1 tsp vanilla
3 tbsp choice of milk
1/2 cup mini chocolate chips
Directions
In a saucepan on LOW heat, add your peanut butter, honey, coconut oil, and vanilla - mix to combine. Once liquidy enough, turn off heat right away to avoid burning.
In a large bowl, add your oats, crushed cashews (take whole cashews, put into a baggy and use a rolling pin or something to smash them!), cinnamon, salt, and milk.
Add in your PB + honey mixture. Mix well, get in there and use your hands if you need to!
Put in the refrigerator for at least 30 minutes until fully cooled, this is to avoid your chocolate chips melting when you mix them in. Once the mix is cooled, add your chocolate chips and mix well.
In a square 8x8 pan, add parchment paper down (try to get it to mold to the pan) add in your mixture to the pan and start to press it down with your hands to evenly distribute throughout the pan. make sure to get the corners!
Return to the fridge overnight (this is ideal, but can do a few hours if you're hangry).
Remove from the pan by pulling on the parchment paper corners, cut into granola bars, store in an airtight container, and enjoy!
