Turkey Taco Bowl


A fun spin on a takeout favorite, our turkey taco bowls are packed with protein and full of flavor. Top them off with our homemade guacamole and pico de gallo and you’ve got a quick and delicious meal perfectly suited to both kids and adults. Dinner doesn’t get much easier, or tastier than this.

Ingredients

  • organic turkey

    onions

    turkey spice mix
    (Salt, cumin, coriander, paprika, anise seed, smoked paprika, chipotle chile, cinnamon, clove, curry powder)

    vaquita beans
    (Vaquita beans, sweet onions, garlic, coriander, clove, cilantro)

    romaine hearts

  • sour cream

    mexican cheese blend

    guacamole
    (Avocados, lemon juice, scallions, jalapeño, cilantro, extra virgin olive oil, salt)

    pico de gallo
    (Tomatoes, red onions, jalapeño, lime juice, cilantro, salt, extra virgin olive oil)

    corn chips

Getting Your Kids Involved:

Kids can help cut the romaine and put the cheese, sour cream, guacamole and other toppings into serving bowls and, of course, they can assemble their own bowl!

Rolling Pin (or wine bottle)

Instructions

1Step One

Lightly coat the bottom of a medium to large skillet with oil and set over medium heat. When hot, stir in the onions and cook until they’re soft and golden.

Once the onions are light brown, add the turkey, sprinkle with about 1/2 of the seasoning mix, and stir to evenly distribute.

Continue cooking, breaking up the turkey with the back of a wooden spoon, until the turkey is cooked through, about 8 minutes. If desired, you can add more spice mix at this point.

2Step Two

Open the vaquita beans and place into a medium pot. Bring to a boil over low to medium heat.

Cut the romaine hearts in half lengthwise. Then cut them into ½” ribbons.

3Step Three

Place the beans and the turkey into separate large serving bowls, and place the sour cream, the Mexican cheese blend, the guacamole, and the pico de gallo into slightly smaller serving bowls.

Divide the romaine evenly into each person’s bowl and have everyone assemble their own bowl. Serve the corn chips on the side.
