Sheet Pan Miso Roasted Cabbage with Crispy Chickpeas

Roasted cabbage wedges get golden and tender under a savory-sweet miso glaze, while chickpeas roast alongside them until crispy. Served over cool, creamy labneh with fresh herbs and a squeeze of lime, this easy sheet pan meal brings plenty of flavor with minimal cleanup.

The “Savory & Caramelized” Sheet Pan Miso Roasted Cabbage with Crispy Chickpeas

When you’re tasked with whipping up a healthy, “veggie-forward” family dinner, sometimes the best solution is to let a humble vegetable be the main event. This Sheet Pan Miso Roasted Cabbage with Crispy Chickpeas uses thick wedges of sweet conehead cabbage, a savory miso glaze, and cool, tangy labneh to create a full meal right on one pan. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another wedge” through bites of savory, caramelized goodness!

Why This Recipe Wins

  • Veggie Power: By incorporating thick wedges of tender conehead cabbage and chickpeas directly onto the sheet pan, the dish provides a “filling and tasty” vegetarian dinner that eats like a full meal.
  • Dinner Surprise: Moving away from a “standard tedious routine” of basic roasted vegetables makes a simple weeknight dinner feel like a “special holiday” feast that puts cabbage center stage.
  • Naturally Savory & Sweet: Brushing the cabbage wedges with a salty-sweet miso glaze provides a “rich yet robust” caramelization that is absolutely addictive.
  • One-Pan Ease: These “kid-approved portions” cook effortlessly together, making them an ideal choice for a hands-off evening with minimal cleanup.

What You’ll Need

  • The Sweet Star: Conehead cabbage (also known as pointed or sweetheart cabbage) cut into sturdy wedges so they hold together, or standard green cabbage if you can’t find it.
  • The Savory Glaze: White miso paste whisked with honey, rice vinegar, soy sauce, and sesame oil for a salty, sweet, tangy, and nutty backbone.
  • The Hearty Crunch: Chickpeas (dried well!) to roast up crispy and give the dish real heft.
  • The Cool Base: Labneh (or thick Greek yogurt mixed with salt and lemon juice) to contrast the warm, caramelized cabbage.

How to Make It

  • The Prep: Cut the cabbage into wedges and arrange on a sheet pan alongside the dried, oiled chickpeas so they are primed to roast and get “perfectly crisp” in the oven.
  • The Glaze Mix: Whisk together the miso, honey, vinegar, soy sauce, and sesame oil until the glaze looks completely “velvety smooth.”
  • The Roast: Brush the cabbage with oil and roast, then flip, give the chickpeas a shake, brush the cabbage with the miso glaze, and roast again until the edges turn deeply “golden-brown.”
  • The Labneh Swoosh: Spread the tangy labneh on each plate, coating the bottom “thoroughly, but gently” to create a cool bed for the warm veggies.
  • The Plate: Top the labneh with the caramelized cabbage wedges, crispy chickpeas, and your favorite toppings for a stunning, “mess-proof” masterpiece!

Get the Kids Involved: The “Cabbage Squad”

Since whisking glazes and building plates is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Chickpea Tossers.” They can help toss the chickpeas with oil on the sheet pan, practicing their “precision.”
  • Ages 6–9: Have them help as “The Glaze Whiskers.” Show them how mixing the miso and honey creates a “scrumptious” and savory sauce.
  • Ages 10+: Let them lead the “Labneh Swooshing.” Under supervision, they can spread the cool yogurt onto the plates and look for the “magic crisp” as the chickpeas come out of the oven.

Tips for Success

  • Patience is Crucial: If you pull the cabbage too early, it will be crunchy and slightly sulfurous. Cooking it longer than you think (a full 40 minutes) is imperative to achieve that “tender and rich” silky, almost buttery texture.
  • Drying Chickpeas Matters: The goal is a real crunch, so making sure the chickpeas are completely dry before roasting ensures the meal stays “refreshing and light” rather than steaming and turning mushy.
  • The Extra Crunch Trick: One can make a “huge batch” of these crispy chickpeas in the air fryer to keep on hand as an easy snack for the rest of the week.

Dinner Note: Finish the plates with toppings like toasted sesame seeds, scallions, cilantro, or a squeeze of lime! It makes finishing this vegetarian dish a “quick and easy” win that pulls all the salty-sweet flavors together perfectly.

  • Variation: For a “decadent and indulgent” twist, add a hearty spoonful of spicy chili crisp over the top or serve alongside a filet of glazed salmon to elevate the flavor profile even further.

Serve & Savor

The Sheet Pan Miso Roasted Cabbage with Crispy Chickpeas is a “tantalizing taste sensation” that proves vegetarian sheet pan dinners can be “out of this world” delicious. It’s a “versatile” recipe that turns humble cabbage and chickpeas into a “memory-making” family favorite.

Ingredients

Scale

Cabbage & Chickpeas

  • 1 large conehead cabbage, or any green cabbage

  • 3 tablespoons olive oil, divided

  • Kosher salt, to taste

  • Freshly ground black pepper, to taste

  • 1 (15-ounce) can chickpeas, drained, rinsed, and dried thoroughly

Miso Glaze

  • 2 tablespoons white miso paste

  • 1 tablespoon honey or maple syrup

  • 1 tablespoon rice vinegar

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • 2 tablespoons warm water

For Serving

  • 1 cup labneh

  • Toasted sesame seeds

  • Sliced scallions

  • Fresh cilantro

  • Chili crisp, sriracha, or red pepper flakes

  • Lime wedges

Instructions

1. Prep the Oven and Cabbage

Preheat the oven to 425°F. Cut the cabbage into 6–8 sturdy wedges, leaving a little of the core attached so the pieces hold together. Arrange them cut side down on a large sheet pan.

2. Season the Chickpeas

Place the dried chickpeas in a medium bowl. Toss with 1 tablespoon of olive oil and a generous pinch of salt and pepper. Spread them on the sheet pan alongside the cabbage, leaving space between the ingredients as much as possible.

3. Oil the Cabbage

Brush the cabbage wedges with the remaining 2 tablespoons of olive oil, coating all sides. Season with salt and pepper.

4. Roast Until Golden

Roast the cabbage and chickpeas for 25 minutes.

5. Mix the Miso Glaze

While everything roasts, whisk together the white miso, honey or maple syrup, rice vinegar, soy sauce, sesame oil, and warm water until smooth.

6. Glaze and Finish Roasting

Remove the sheet pan from the oven. Flip the cabbage wedges and shake the chickpeas to help them brown evenly.

Brush the cabbage generously with the miso glaze, keeping the glaze off the chickpeas so they can crisp up. Return the pan to the oven and roast for another 10–15 minutes, until the cabbage is deeply golden at the edges and tender all the way through and the chickpeas are crunchy.

For extra color, broil for 1–2 minutes at the end, watching closely to prevent burning. If the cabbage finishes before the chickpeas, transfer it to serving plates and let the chickpeas roast a little longer.

7. Assemble and Serve

Spread about ¼ cup of labneh onto each of four plates. Add a cabbage wedge and a handful of crispy chickpeas to each plate.

Drizzle with any remaining miso glaze, then finish with toasted sesame seeds, scallions, cilantro, chili crisp, and a squeeze of lime. Use your favorite toppings or let everyone customize their own plate.

Notes

  • Dry the chickpeas well: Excess moisture makes it harder for them to turn crispy. Pat them dry with a clean kitchen towel or paper towels before roasting.

  • Give the cabbage enough time: The thickest part should be completely tender, and the edges should be deeply golden. Add a few extra minutes if needed.

  • Keep the chickpeas uncovered by glaze: The miso mixture is flavorful, but its moisture and sweetener can prevent the chickpeas from crisping properly.

  • Leave room on the pan: Crowding traps steam. Use two sheet pans if your cabbage wedges and chickpeas don’t fit comfortably in one layer.

  • Prepare the glaze ahead: Whisk it together in advance and refrigerate it in a covered container until you’re ready to cook.
