If you’ve never cooked with preserved lemons before, you’re in for a treat. They’re incredibly easy to make, last for months in the fridge, and add deep, complex lemon flavor to everything from chicken to salads to grain bowls.

Using the air fryer keeps this dish light while delivering perfectly juicy chicken with beautifully caramelized edges — no oven required.

  • 1 preserved lemon (plus juice from the jar)

  • 4 boneless, skinless chicken breasts

  • 1 tablespoon olive oil

Instructions

Step 1: Prepare the Marinade

Finely chop the preserved lemon and place it into a 1-cup measuring cup. Add enough juice from the preserved lemon jar to fill the cup.

Step 2: Marinate the Chicken

In a large bowl, combine the chopped preserved lemon mixture, chicken breasts, and olive oil. Toss well to coat. Let marinate for 10 minutes.

Step 3: Air Fry

Preheat the air fryer to 400°F. Arrange the chicken breasts in a single layer in the basket. Cook for 18–20 minutes, or until the internal temperature reaches 165°F and the chicken is cooked through.

Step 4: Serve

Serve warm with your favorite sides such as roasted vegetables, rice, or a fresh salad.

Notes

  • Don’t Skip the Juice: The preserved lemon liquid intensifies the citrus flavor and keeps the chicken moist.

  • Marinate Longer if You Have Time: While 10 minutes works beautifully, marinating for up to 1 hour will deepen the flavor even more.

  • Check for Doneness: Cooking time may vary depending on the thickness of your chicken breasts. Use a meat thermometer for best results.
