Air Fryer Veggies are one of the quickest and easiest ways to prepare vegetables with minimal effort. The air fryer produces crispy edges and tender centers without needing to heat up the oven. With just oil, salt, and your favorite seasonings, this versatile recipe works with almost any vegetable you have on hand.

Ingredients

Scale
  • 3 cups mixed vegetables, cut into 1-inch pieces
    (cauliflower, broccoli, squash, carrots, beets, etc.)

  • 1 tablespoon olive oil or olive oil spray

  • 1/2 teaspoon kosher salt

Optional Seasonings

  • Cajun seasoning

  • Italian herb seasoning

  • Herbs de Provence

Instructions

  1. Prepare the vegetables
    Cut the vegetables into 1-inch pieces for even cooking.

  2. Season
    Place the vegetables in a bowl and toss with olive oil and kosher salt. Add any optional seasonings if desired.

  3. Air fry
    Transfer the vegetables to the air fryer basket in an even layer.

  4. Cook
    Air fry at 400°F (200°C) for 15–20 minutes, or until the vegetables are golden and fork-tender.

  5. Serve
    Serve warm as a simple side dish or add to bowls, salads, or wraps.

Notes

  • Avoid overcrowding the basket so the vegetables roast instead of steam.
  • Shake the basket halfway through cooking for even crisping.
  • Dense vegetables like carrots or beets may need a few extra minutes.
  • Finish with lemon juice, parmesan, or chili flakes for extra flavor.
