Ingredients
- 1 1/2 cups white whole wheat flour
- 2 teaspoons baking powder
- 1/4 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsweetened applesauce
- 1/2 cup buttermilk
- 1/2 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup peeled and chopped apples (about 2 medium)
Instructions
1. Preheat & Prep
- Preheat oven to 400°F (200°C)
- Grease or line a muffin tin
2. Combine Dry Ingredients
- In a bowl, whisk:
- Flour
- Baking powder
- Salt
- Cinnamon
3. Mix Wet Ingredients
- In a separate bowl, whisk:
- applesauce
- Buttermilk
- Honey
- Egg
- Vanilla extract
4. Make the Batter
- Add dry ingredients to wet ingredients
- Mix until just combined (avoid overmixing)
- Fold in chopped apples
5. Fill & Bake
- Fill muffin cups about 3/4 full
- Bake for ~20 minutes, or until a toothpick inserted comes out clean
6. Cool & Serve
- Cool in pan for 5–10 minutes
- Transfer to a rack
- Serve warm or at room temperature
