Apple Applesauce Muffins

A soft, naturally sweet muffin that leans on applesauce and honey for moisture and flavor—resulting in a tender crumb with a clean, apple-forward profile.

Ingredients

Scale
  • 1 1/2 cups white whole wheat flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup buttermilk
  • 1/2 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup peeled and chopped apples (about 2 medium)

Instructions

1. Preheat & Prep

  • Preheat oven to 400°F (200°C)
  • Grease or line a muffin tin

2. Combine Dry Ingredients

  • In a bowl, whisk:
    • Flour
    • Baking powder
    • Salt
    • Cinnamon

3. Mix Wet Ingredients

  • In a separate bowl, whisk:
    • applesauce
    • Buttermilk
    • Honey
    • Egg
    • Vanilla extract

4. Make the Batter

  • Add dry ingredients to wet ingredients
  • Mix until just combined (avoid overmixing)
  • Fold in chopped apples

5. Fill & Bake

  • Fill muffin cups about 3/4 full
  • Bake for ~20 minutes, or until a toothpick inserted comes out clean

6. Cool & Serve

  • Cool in pan for 5–10 minutes
  • Transfer to a rack
  • Serve warm or at room temperature

Notes

  • Don’t overmix: Maintains a tender crumb
  • Use firm apples: Helps retain structure during baking
  • Room temp ingredients: Promotes even mixing
