This sweet twist on classic matzah brei combines cinnamon, tender grated apple, and crunchy walnuts for a cozy breakfast. It’s simple, satisfying, and a fun change from the savory version.

Ingredients

  • 2 large eggs

  • 2 tablespoons milk

  • ½ teaspoon ground cinnamon

  • ⅛ teaspoon kosher salt

  • 2 sheets whole wheat matzo

  • 2 teaspoons butter

  • 1 small apple, grated

  • 2 tablespoons chopped walnuts

Instructions

1. Prepare the Egg Mixture

In a bowl, whisk together the eggs, milk, cinnamon, and salt.

2. Add the Matzo

Break the matzo into bite-sized pieces and add them to the egg mixture. Stir gently until the pieces are evenly coated.

3. Start Cooking

Melt the butter in a saucepan over medium heat.

Add the matzo and egg mixture to the pan. Cook, stirring occasionally, for about 1 minute.

4. Add the Apple and Walnuts

Stir in the grated apple and chopped walnuts.

Continue cooking for about 2 minutes, stirring occasionally, until the eggs are cooked through and the apple is tender.

5. Serve

Transfer the matzah brei to a plate and serve warm.

Notes

  • Choose your apple texture: Leave the apple peel on for extra color and texture, or peel it for a softer result.

  • Break the matzo evenly: Bite-sized pieces make it easier to get a little of everything in each forkful.

  • Don’t overcook the eggs: Remove the pan from the heat as soon as the eggs are cooked through and tender.

  • Prep ahead: Grate the apple and chop the walnuts before you start cooking so everything is ready to go.
