Ingredients
- 1 large egg
- ¾ cup panko breadcrumbs, white or whole wheat
- 1 teaspoon garlic powder
- 1 teaspoon Italian herbs
- ½ teaspoon kosher salt
- 2 boneless, skinless chicken breasts, cut into chunks
- Cooking oil spray
Instructions
1. Prepare the Oven
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
2. Prepare the Coating
Beat the egg in a shallow bowl.
In a second shallow bowl, combine the panko breadcrumbs, garlic powder, Italian herbs, and salt.
3. Coat the Chicken
Dip each piece of chicken into the beaten egg, then coat it completely with the seasoned breadcrumbs.
Keep one hand clean for handling the chicken and use the other for the breadcrumb mixture to make coating easier.
4. Arrange the Nuggets
Place the breaded chicken pieces on the prepared baking sheet. Lightly spray each piece with cooking oil.
5. Bake
Bake for 18–20 minutes, or until the chicken is cooked through and the coating is golden and crisp.
6. Serve
Let the nuggets cool briefly before serving. Pair them with your favorite dipping sauce and simple sides.
Notes
- Keep one hand clean: Use one hand for the egg and the other for the breadcrumbs to keep the process less messy.
- Coat completely: Make sure each chicken piece is covered with breadcrumbs for a crisp coating.
- Don’t overcrowd the pan: Leave a little space between the nuggets so they bake evenly.
- Check for doneness: Chicken should be fully cooked before serving.
