Baked Nectarines with Honey Yogurt Sauce

Sweet, juicy nectarines are the star of this simple summer recipe. Baked (or grilled or broiled!) until tender and lightly caramelized, then topped with creamy honey yogurt and crunchy pistachios, this dish is the perfect balance of fresh, warm, sweet, and tangy.

Whether you serve it for breakfast, a snack, or a light dessert, these Baked Nectarines with Honey Yogurt Sauce are sure to become a seasonal favorite.

Ingredients

  • 2 nectarines or peaches, halved and pitted

  • Juice of ½ lemon

  • ½ cup Greek yogurt

  • 12 tablespoons honey

  • 2 tablespoons pistachios, chopped

Instructions

Prepare the Fruit

Slice nectarines (or peaches) in half and remove the pits.

To Bake

  1. Preheat oven to 400°F.

  2. Place nectarines cut-side up in an 8×8-inch baking dish.

  3. Squeeze lemon juice evenly over the fruit.

  4. Bake for 10–15 minutes, or until tender.

  5. Remove from oven and allow to cool slightly.

    To Broil

    1. Preheat broiler.

    2. Place nectarines cut-side up on a baking sheet.

    3. Squeeze with lemon juice.

    4. Broil for 4–5 minutes, until lightly caramelized and tender.

      To Grill

      1. Preheat grill to medium-high heat.

      2. Squeeze lemon juice over cut sides.

      3. Grill nectarines cut-side down for 3–4 minutes, until grill marks form and fruit softens.

Notes

  • Use ripe but slightly firm fruit for best texture and flavor.

  • White or yellow nectarines and peaches all work beautifully in this recipe.

  • Adjust honey to taste depending on how sweet your fruit is.

  • Serve warm or at room temperature.
