Banana Berry Bread

Filled with naturally sweet bananas and beautiful bright berries, this moist Banana Berry Bread is perfect for a quick breakfast or delicious snack!
 

Ingredients

Scale
  • 2 cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 3 small ripe bananas, mashed
  • 1/3 cup milk
  • 2 teaspoons vanilla extract
  • 2 cups mixed berries (fresh or frozen)

Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Grease a 9×5-inch loaf pan.

2. Mix Dry Ingredients

  • In a bowl, whisk together flour, baking soda, and salt.

3. Cream Butter & Sugar

  • In a mixer, beat butter and sugar for about 3 minutes until light and fluffy.

4. Add Wet Ingredients

  • Add eggs, mashed bananas, milk, and vanilla.
  • Mix until well combined.

5. Combine & Fold

  • Gradually add dry ingredients into wet mixture.
  • Mix until just combined (do not overmix).
  • Gently fold in berries.
    • Tip: If using frozen berries, add them frozen to prevent color bleeding.

6. Bake

  • Pour batter into prepared loaf pan.
  • Bake for about 1 hour, or until a toothpick inserted comes out clean.

7. Cool & Serve

  • Cool in pan for 10 minutes, then transfer to a rack.
  • Slice and enjoy!

Notes

  • Do not overmix: Keeps the bread soft and tender.
  • Use ripe bananas: The riper, the sweeter and more flavorful.
  • Frozen berries tip: Prevents the batter from turning purple.
  • Even baking: Check at 50 minutes to avoid overbaking.
