When classic meatballs start to feel a little predictable, it’s time to bring something new to the table. These Beef Kofta with Lemon Yogurt Sauce are essentially a meatball — but elevated with warm spices, shaped into savory sausages, and served with a bright, creamy sauce that makes every bite unforgettable.

They’re simple enough for a weeknight dinner, yet exciting enough to make everyone at the table take notice. Wrapped in warm flatbread with fresh vegetables and a tangy yogurt sauce, this dish delivers bold flavor without any heat — making it family-friendly and full of personality.

For the Kofta

  • 1 pound lean ground beef

  • 1 small onion, minced

  • 3 garlic cloves, minced

  • 2 tablespoons paprika

  • ½ teaspoon coriander

  • 2 teaspoons ground cumin

  • 1½ teaspoons kosher salt, divided

For the Lemon Yogurt Sauce

  • 1 cup Greek yogurt

  • ¼ cup chopped fresh mint

  • Juice of 1 small lemon

For Serving

  • 4 Middle Eastern flatbreads

  • 1 small Persian cucumber, thinly sliced

  • 1 tomato, sliced

Instructions

1. Make the Kofta Mixture

In a large bowl, combine the ground beef, onion, garlic, paprika, coriander, cumin, and 1 teaspoon of the kosher salt. Mix until well combined.

2. Shape the Kofta

Divide the mixture into 8 equal portions. Shape each portion into a sausage-like log.

3. Cook the Kofta

Heat 1 tablespoon oil in a large sauté pan over medium-high heat. Add the kofta and cook for about 6 minutes total, turning every 2 minutes to brown evenly on all sides and cook through.

4. Prepare the Lemon Yogurt Sauce

While the kofta are cooking, stir together the Greek yogurt, chopped mint, lemon juice, and remaining ½ teaspoon salt in a small bowl.

5. Assemble and Serve

Warm the flatbreads if desired. Place kofta inside each flatbread and top with lemon yogurt sauce, cucumber slices, and tomato. Serve immediately.

Notes

  • You can substitute ground lamb or turkey for the beef if desired.

  • If you don’t have flatbread, serve over rice or in lettuce wraps.

  • Kofta can also be shaped into patties or skewered before cooking.

  • Make the yogurt sauce ahead of time for even deeper flavor.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
