Ingredients
- 1 baguette, sliced
- 1/2 cup light mayonnaise
- 2–3 romaine lettuce leaves, torn into 2-inch pieces
- 4 small tomatoes, sliced
- 4 slices bacon, cooked and chopped into 1-inch pieces
- 2 green onions, chopped
- Maldon sea salt
Instructions

Cook the bacon
Place the bacon in a large skillet over medium heat and cook until crispy on both sides, flipping once (about 10 minutes).
Transfer to a paper towel–lined plate, let cool slightly, then chop into 1-inch pieces. -
Prepare the base
Spread a thin layer of mayonnaise on each baguette slice. -
Assemble the bites
Layer each slice in this order:-
Lettuce

Tomato slice
-
Bacon pieces
-
Chopped green onions
-

Finish
Sprinkle lightly with Maldon sea salt. -
Serve
Arrange on a platter and serve immediately.
Notes
- Lightly toast the baguette slices for extra crunch.
- Use cherry tomatoes (halved) for smaller, neater bites.
- Add avocado slices for a BLT twist.
- Swap mayo with garlic aioli or yogurt-based spread for variation.
