Breakfast Rice Cakes are a fun, family-friendly way to turn leftover rice into something warm and satisfying. A little cinnamon and vanilla give these golden rice cakes a cozy breakfast flavor, while fresh berries and your favorite toppings make them easy to customize.

They’re simple enough for a weekday morning and special enough for a weekend breakfast.

Ingredients

  • 2 large eggs
  • 2 cups cooked brown rice
  • 2 tablespoons coconut or brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup fresh blueberries, optional
  • Vegetable, avocado, grapeseed, olive, or canola oil, for the pan
  • Toppings: maple syrup, honey, fresh berries, bananas, hemp seeds, chocolate chips, or whipped cream

Instructions

  1. Whisk the eggs in a medium bowl.
  2. Add the cooked rice, sugar, salt, vanilla, cinnamon, and blueberries, if using. Stir until well combined.
  3. Heat a large sauté pan over medium heat and add a thin layer of oil.
  4. Using a 1/4-cup ice cream scoop or large spoon, scoop the rice mixture into the pan. Gently flatten each scoop into a small cake.
  5. Cook for 3–4 minutes on each side, or until golden brown and cooked through.
  6. Serve warm with your favorite toppings.

Notes

  • Use cooled rice: Leftover, chilled rice tends to hold together well when making the cakes.
  • Keep the cakes small: Smaller rice cakes are easier to flip and less likely to fall apart.
  • Don’t overcrowd the pan: Cook in batches if needed so the rice cakes have room to brown evenly.
  • Customize the toppings: These are just as good with a simple drizzle of honey as they are with berries, bananas, or a few chocolate chips.
