Ingredients
- Start by prepping your vegetables. Peel and mince the garlic and ginger, and peel and finely chop the carrots.
- Heat oil in a sauté pan over medium heat and add the garlic. Cook until fragrant and softened, about 30 seconds. Add the ginger and carrots, cover, and cook until the carrots are tender — about 15 minutes.
- Transfer everything to a food processor. Add the tahini and miso, then puree until completely smooth and creamy.
- Toss with your family’s favorite pasta and serve immediately.
