These crispy, cheesy wafers are a fun homemade snack that kids love. Made with sharp cheddar, butter, and flour, they’re easy to shape into little crackers and perfect for lunchboxes, snack time, or sharing.

Ingredients

  • ½ pound sharp cheddar cheese, grated (about 2 cups)

  • 5 tablespoons chilled butter, cut into cubes

  • 1 cup all-purpose flour, plus extra for sprinkling

  • Raw pecan halves or another nut of your choice, optional

Instructions

1. Make the Dough

Add the grated cheddar, flour, and chilled butter to a food processor. Pulse until the ingredients come together into a crumbly dough that holds together when pressed.

2. Chill the Dough

Transfer the dough to a piece of parchment or waxed paper. Shape it into a thick, flat circle and cover it.

Refrigerate for at least 1 hour or overnight.

3. Roll and Cut

Preheat the oven to 400°F.

Place the chilled dough on the parchment or waxed paper and roll it out to about ¼ inch thick.

Use small cookie cutters to cut the dough into fun shapes. You can also cut simple circles with a small round cutter.

4. Add the Toppings

Arrange the shapes on a parchment-lined or silicone-lined baking sheet. If using pecans or other nuts, gently press one onto each wafer.

5. Bake

Bake for 12–15 minutes, or until the wafers are lightly golden and crisp.

Let them cool on the baking sheet for about 2 minutes before transferring them to a cooling rack.

6. Serve

Let the wafers cool completely before serving. They’ll become crispier as they cool.

Notes

  • Chill the dough well: Cold dough is easier to roll and cut, and helps the wafers hold their shape.

  • Don’t worry if the dough looks crumbly: It should come together when pressed.

  • Keep the wafers similar in size: This helps them bake evenly.

  • Let them cool: The wafers crisp up as they cool, so give them a few minutes before judging the texture.
