Ingredients
- 2 tablespoons oil, divided
- 2 bell peppers, sliced
- 2 onions, sliced
- 2 teaspoons fajita seasoning (or 1 tablespoon for extra spice)
- 1 teaspoon salt, divided
- 1 ½ pounds chicken breast, cut into 2-inch strips
- 1 lime, juiced
- ¼ cup fresh cilantro, chopped
Instructions
Heat 1 tablespoon of oil in a large sauté pan over medium-high heat.
Add the sliced onions and bell peppers. Sauté for 5–6 minutes, or until they begin to soften and slightly caramelize.
Remove from the pan and set aside.
Step 2: Cook the ChickenAdd the remaining 1 tablespoon of oil to the pan.
Add the chicken strips, 1 teaspoon fajita seasoning, and ½ teaspoon salt. Sauté for about 2 minutes, stirring occasionally.
Step 3: Bring It TogetherReturn the onions and peppers to the pan.
Add the remaining 1 teaspoon fajita seasoning and ½ teaspoon salt. Cook for another 2 minutes, or until the chicken is cooked through.
Step 4: Finish with Fresh FlavorAdd the lime juice and chopped cilantro. Stir to combine and remove from heat.
Serve immediately with warm tortillas and your favorite toppings.
