Skip the store-bought bars and make your own! These Chocolate Chip Granola Bars are crunchy, lightly sweet, and packed with oats, coconut, and chocolate chips. Perfect for lunchboxes, after-school snacks, breakfast on the go, or a quick energy boost throughout the day.

 

Ingredients

  • ▢ 4 cups old fashioned oats
  • ▢ 1/4 cup whole wheat flour
  • ▢ 1/2 cup shredded unsweetened coconut
  • ▢ 1/3 cup brown sugar
  • ▢ 1 cup chocolate chips (or substitute raisins or other dried fruit)
  • ▢ 1/2 teaspoon kosher salt
  • ▢ 1/2 cup vegetable, canola, avocado, or other oil of choice
  • ▢ 1 teaspoon vanilla extract
  • ▢ 1/2 cup honey

Instructions

  1. Preheat oven to 325°F (165°C).
  2. In a large bowl, combine the oats, flour, coconut, brown sugar, chocolate chips, and salt.
  3. In a separate bowl, whisk together the oil, vanilla extract, and honey.
  4. Pour the wet ingredients over the oat mixture and stir thoroughly until everything is evenly coated.
  5. Transfer the mixture to a parchment-lined baking sheet and shape into a rectangle approximately 13 x 9 inches and about 1 inch thick. Press firmly to help the bars hold together.
  6. Bake for 30–40 minutes, or until lightly golden.
  7. Allow the granola slab to cool completely.
  8. Cut into 3 x 1-inch bars and serve.

Notes

  • Storage: Individually wrapped bars stay fresh for several weeks when stored in an airtight container.
  • Freezing: Freeze in an airtight container for up to 4 months. Thaw for about 20 minutes before enjoying.
  • Flour Options: Whole wheat flour adds extra nutrition, but all-purpose, gluten-free, or almond flour can also be used.
  • Customize the Mix-Ins: Replace chocolate chips with dried cranberries, cherries, raisins, or your favorite dried fruit.
  • Press Firmly: Compacting the mixture well before baking helps prevent crumbly bars and keeps everything together after slicing.
