Citrus Herb Vinaigrette is a bright, fresh dressing that can instantly bring a simple salad to life. Fresh lemon juice, herbs, shallot, Dijon mustard, and honey come together with olive oil for a balanced dressing that’s tangy, lightly sweet, and easy to customize.

It’s also a great make-ahead staple to keep in the fridge for salads, roasted vegetables, grain bowls, or as a simple marinade.

Ingredients

  • 1 small shallot, finely diced
  • 2 tablespoons chopped fresh herbs, such as chives, basil, parsley, dill, or chervil
  • 2/3 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • Salt and pepper, to taste

Instructions

  • Add the shallot, fresh herbs, olive oil, lemon juice, white wine vinegar, Dijon mustard, honey, salt, and pepper to a bowl or liquid measuring cup.
  • Whisk with a small whisk or fork until well combined.
  • Alternatively, add everything to a mason jar, secure the lid, and shake until emulsified.
  • Serve immediately, or cover and refrigerate until ready to use.

Notes

  • Use fresh ingredients: Freshly squeezed lemon juice, crisp shallot, and vibrant herbs give the best flavor.
  • Taste and adjust: If the vinaigrette tastes too tangy, add a little more honey. For extra brightness, add another splash of lemon juice or vinegar.
  • Let it rest: Allowing the vinaigrette to sit for 10–15 minutes gives the flavors time to blend.
  • Shake before serving: Homemade vinaigrettes naturally separate as they sit, so give the jar a good shake before drizzling.
  • Let kids dip: Serve the dressing on the side as a dip for vegetables or salad ingredients. It can make trying new veggies feel a little more fun.
