Ingredients
- 1 1/2 cups old-fashioned oats
- 1/2 cup peanut butter
- 1/2 cup honey
- 1/2 cup unsweetened coconut flakes
- 1 serving protein powder, optional
Instructions
- Place the oats and optional protein powder in a food processor or blender. Pulse until the oats are finely ground.
- In a mixing bowl, stir together the peanut butter and honey.
- Add the ground oats and stir until everything is thoroughly combined. The mixture should be thick enough to hold its shape.
- Scoop about 1 tablespoon of the mixture at a time and roll into balls or small logs.
- Place the coconut flakes in a shallow bowl or plate.
- Roll each ball in the coconut until evenly coated.
- Serve right away, or chill until firm.
Notes
- Too sticky? Chill the mixture for 10–15 minutes before rolling.
- Too dry? Stir in a little more peanut butter or honey until the mixture holds together.
- Nut-free option: Use sunflower seed butter instead of peanut butter.
- Keep them bite-size: Smaller portions are easier for little hands to grab and pack into lunchboxes.
