Tender soba noodles and crisp broccoli are tossed in a creamy coconut milk sauce with fresh ginger, garlic, lime, and cilantro.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 package (9.5 ounces) soba noodles

  • 2 teaspoons coconut oil

  • 1 teaspoon freshly grated ginger

  • 1 garlic clove, minced

  • 2 cups broccoli florets

  • 1 teaspoon kosher salt

  • 1 can (15 ounces) light coconut milk

  • 2 tablespoons lime juice

  • 1 tablespoon chopped cilantro

Optional Add-Ins

  • Cooked shrimp

  • Cooked chicken

Instructions

  1. Cook the soba noodles. Prepare the noodles according to the package directions. Drain, rinse under cold water, and set aside.

  2. Sauté the aromatics. Heat the coconut oil in a small pot over medium heat. Add the minced garlic and grated ginger. Cook for about 1 minute, stirring until fragrant.

  3. Add the broccoli. Stir in the broccoli florets, kosher salt, and coconut milk.

  4. Simmer the sauce. Bring the mixture to a boil, then reduce the heat to medium. Cook for approximately 5 minutes, or until the broccoli is tender but still has a little bite.

  5. Add the noodles. Transfer the cooked soba noodles to the coconut milk mixture. Toss gently until the noodles are thoroughly coated.

  6. Finish with lime and cilantro. Stir in the lime juice and sprinkle with chopped cilantro.

  7. Serve warm. Divide into bowls and enjoy while the sauce is creamy.

Notes

  • Rinse the soba noodles: Rinsing with cold water removes excess starch and helps prevent the noodles from sticking together.

  • Avoid overcooking the broccoli: Cook just until tender for a better texture and vibrant color.

  • Stir before serving: Coconut milk may settle slightly, so toss the noodles well to redistribute the sauce.

  • Adjust the consistency: If the sauce becomes too thick, add a small splash of water to loosen it.

  • Check your soba noodles: Some soba noodles contain wheat, so check the package if preparing the dish for someone avoiding gluten.
