Ingredients
- 3 large eggs
- 1 cup cottage cheese (low-fat or full-fat)
- 1 teaspoon vanilla extract
- 2 tablespoons honey or agave
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon kosher salt
- Butter, oil, or cooking spray, for the pan
Instructions
- In a large bowl, whisk together the eggs, cottage cheese, vanilla, and honey (or agave) until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Add the dry ingredients to the wet ingredients and stir gently until just combined. A few small lumps are perfectly fine.
- Let the batter rest for 5 minutes while heating the pan.
- Heat a lightly greased large sauté pan or griddle over medium heat.
- Scoop about 2 tablespoons of batter onto the pan for each pancake.
- Cook for about 2 minutes, or until bubbles begin to appear on the surface.
- Carefully flip and cook for another 2 minutes, or until golden brown and cooked through.
- Serve warm with fresh fruit, maple syrup, yogurt, or your favorite toppings.
