These crispy air fryer artichoke hearts are a fast, flavorful way to turn a pantry staple into a satisfying appetizer or snack. The air fryer creates a golden exterior while keeping the inside tender, and the creamy garlic dip adds a bright, tangy contrast.

Artichoke Hearts

  • 2 cans artichoke hearts

  • 1 tablespoon olive oil (or olive oil spray)

  • ½ teaspoon garlic powder

  • ¼ teaspoon onion powder

  • ½ teaspoon Italian herbs

  • ½ teaspoon kosher salt

  • Freshly grated parmesan cheese, for serving (optional)

Creamy Garlic Dip

  • 1 cup Greek yogurt

  • 2 cloves garlic, chopped

  • Juice of 1 lemon

  • ½ teaspoon kosher salt

Instructions

  1. Prepare the artichokes
    Drain the artichoke hearts and cut them into halves or quarters. Pat dry with a paper towel to remove excess moisture.

  2. Season
    Place the artichokes in a bowl and toss with olive oil, garlic powder, onion powder, Italian herbs, and salt until evenly coated.

  3. Air fry
    Arrange the artichokes in a single layer in the air fryer basket. Air fry at 400°F (200°C) for 10 minutes, or until golden and tender.

  4. Make the dip
    In a bowl, combine Greek yogurt, chopped garlic, lemon juice, and salt. Stir until smooth.

  5. Serve
    Remove the artichokes from the air fryer, sprinkle with parmesan if desired, and serve warm with the creamy garlic dip.

Notes

  • Dry the artichokes well before seasoning—this helps them crisp up better in the air fryer.

  • Avoid overcrowding the basket; cook in batches if necessary for maximum crispiness.

  • Try different seasonings such as lemon pepper, smoked paprika, Cajun seasoning, or Herbs de Provence for variety.

  • The garlic dip can be made ahead and stored in the refrigerator for up to 2 days.
