Cucumber Avocado Salsa is fresh, creamy, and full of bright flavor. Crisp cucumber, buttery avocado, fresh herbs, and lime come together in minutes for a versatile salsa that’s perfect with chips or spooned over grilled chicken, fish, or tacos.

With no cooking required, it’s an easy recipe that’s ideal for warm days, quick lunches, or last-minute gatherings.

Ingredients

  • 1 large cucumber, peeled and diced
  • 2 ripe avocados, peeled, pitted, and cubed
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon chopped fresh mint
  • Juice of 1 lime
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt

Instructions

  1. Peel and dice the cucumber.
  2. Cube the avocados and chop the cilantro and mint.
  3. Add all the ingredients to a large bowl.
  4. Gently toss until everything is evenly combined, taking care not to mash the avocado.
  5. Serve immediately with tortilla chips, or spoon over grilled chicken, fish, shrimp, or tacos.
