Ingredients
- 1 large cucumber, peeled and diced
- 2 ripe avocados, peeled, pitted, and cubed
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon chopped fresh mint
- Juice of 1 lime
- 1 tablespoon olive oil
- 1/2 teaspoon kosher salt
Instructions
- Peel and dice the cucumber.
- Cube the avocados and chop the cilantro and mint.
- Add all the ingredients to a large bowl.
- Gently toss until everything is evenly combined, taking care not to mash the avocado.
- Serve immediately with tortilla chips, or spoon over grilled chicken, fish, shrimp, or tacos.
