Ingredients

  • 6 hard-boiled eggs
  • 1 teaspoon Dijon mustard
  • 1/4 cup mayonnaise (or vegan mayonnaise)
  • 1/4 teaspoon kosher salt
  • 1520 whole pitted olives (black, green, or Kalamata)

Instructions

  1. Prepare the eggs
    Slice the hard-boiled eggs lengthwise. Carefully remove the yolks and place them in a mixing bowl.

  2. Make the filling
    Add the Dijon mustard, mayonnaise, and salt to the yolks. Mash with a fork until smooth and creamy.
