Ham and Asparagus Quiche

A creamy, savory quiche filled with tender asparagus, ham, and melty Swiss cheese. It’s easy enough for a weeknight dinner and special enough for brunch.

The “Creamy & Savory” Ham and Asparagus Quiche

When you’re tasked with whipping up a springtime meal for a healthy, “easy-to-make” family brunch, sometimes the best solution is to rely on a classic baked crust. This Ham and Asparagus Quiche uses fresh asparagus, savory ham, and Swiss cheese to create a bakery-style tart right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another slice” through bites of creamy, flaky goodness!

Why This Recipe Wins

  • Springtime Power: By incorporating fresh asparagus and savory ham directly into the filling, the dish provides a “filling and tasty” protein boost that feels perfectly seasonal.
  • Brunch Surprise: Moving away from a “standard tedious routine” of plain scrambled eggs makes a simple weekend morning feel like a “special holiday” feast.
  • Naturally Creamy: Blending eggs with half and half and Swiss cheese provides a “rich yet robust” texture that sets up beautifully in the oven.
  • Make-Ahead Ease: These “crowd-pleasing portions” can be prepped or baked in advance, making them an ideal choice for busy mornings when you need a flexible meal.

What You’ll Need

  • The Custard Base: Eggs and half and half to build that rich, silky-smooth filling.
  • The Savory Core: Chopped ham (a great way to use leftovers!) and nutty Swiss cheese.
  • The Fresh Pop: Fresh asparagus, ends trimmed and chopped small so they cook evenly within the custard.
  • The Flaky Foundation: An unbaked pie crust (homemade or store-bought) to hold all the creamy goodness.

How to Make It

  • The Crust Prep: Mold the pie dough into your pan and freeze for 10 minutes so it is primed to hold the filling and get “perfectly crisp” in the oven.
  • The Whisk: Whisk the eggs and half and half together in a large bowl until the mixture is completely “velvety smooth.”
  • The Mix-In: Stir the Swiss cheese, ham, asparagus, and a pinch of salt into the egg mixture, distributing the ingredients “thoroughly, but gently.”
  • The Bake: Pour the filling into the chilled crust and bake at 350°F for 50 minutes until the edges are firm, the center has a slight jiggle, and the top turns a gorgeous “golden-brown.”
  • The Plate: Allow the quiche to cool slightly so it sets fully, then slice into wedges and serve for a warm, “mess-proof” masterpiece!

Get the Kids Involved: The “Quiche Crew”

Since whisking eggs and sprinkling fillings is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Cheese Sprinklers.” They can help toss the shredded Swiss cheese into the egg bowl, practicing their “precision.”
  • Ages 6–9: Have them help as “The Ham & Veggie Droppers.” Show them how folding the ham and asparagus into the wet mix creates a “scrumptious” and colorful filling.
  • Ages 10+: Let them lead the “Crust Shaping.” Under supervision, they can press the pie dough into the dish and look for the “magic jiggle” in the center to know when the quiche is done baking.

Tips for Success

  • Baking Time is Crucial: If you overbake the quiche, the eggs will turn rubbery. Pulling it out of the oven when the center still has a slight wiggle is imperative to achieve that “tender and rich” custardy bite.
  • Veggie Swaps Matter: The goal is a perfect slice, so if asparagus isn’t your jam, substituting mushrooms, zucchini, or broccoli ensures the quiche stays “refreshing and light” while using up whatever is in your fridge.
  • The Make-Ahead Trick: One can make a “huge batch” of the liquid filling the night before and refrigerate it to save time the next day.

Brunch Note: You can freeze the fully baked and cooled quiche for up to 3 months! It makes reheating a slice straight from the freezer a “quick and easy” lifesaver on busy mornings or unexpected brunch gatherings.

  • Variation: For a “decadent and indulgent” twist, swap the Swiss cheese for sharp Gruyère or add crumbled bacon and a pinch of nutmeg to elevate the flavor profile even further.

Serve & Savor

The Ham and Asparagus Quiche is a “tantalizing taste sensation” that proves simple egg bakes can be “out of this world” delicious. It’s a “versatile” recipe that turns basic leftovers and pie dough into a “memory-making” family favorite.

A creamy, savory quiche filled with tender asparagus, ham, and melty Swiss cheese. It’s easy enough for a weeknight dinner and special enough for brunch.

Ingredients

Scale

For the Quiche

  • 4 large eggs
  • 3/4 cup half-and-half
  • 1 cup shredded Swiss cheese
  • 1 cup chopped asparagus
  • 1 cup chopped ham
  • 1/2 teaspoon kosher salt
  • 1 unbaked pie crust, homemade or store-bought

For the Pie Crust

  • 1 1/3 cups all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 1/2 cup cold butter, cubed
  • 23 tablespoons water

Instructions

  1. Make the crust: Add the flour, salt, and sugar to a food processor and pulse to combine. Add the cold butter and pulse until the mixture looks like coarse crumbs.
  2. Bring it together: Add the water 1 tablespoon at a time, pulsing until moist clumps form. If the dough still looks dry, add more water 1 teaspoon at a time. Shape into a disk, wrap, and refrigerate for 1 hour, or until cold.
  3. Prep the filling: Preheat the oven to 350°F. In a bowl, whisk together the eggs and half-and-half. Stir in the Swiss cheese, asparagus, ham, and salt.
  4. Chill the crust: Place the pie dough into a pie or tart pan and press it gently into the shape of the pan. Place it in the freezer for 10 minutes to chill.
  5. Bake the quiche: Pour the filling into the chilled crust. Bake for about 50 minutes, until the edges are firm and the center has just a slight jiggle. A knife inserted near the center should come out mostly clean.
  6. Cool and serve: Let the quiche cool before slicing. Serve warm or at room temperature.

Notes
