Dumpling Soup combines tender dumplings, savory broth, mushrooms, ginger, and fresh greens for a comforting meal that’s easy to make.

  • Total Time: 25 minutes
  • Yield: 6 servings

Ingredients

Scale
  • 2 tablespoons olive oil

  • 1 cup shiitake mushrooms, sliced

  • 3 cloves garlic, minced

  • 1 tablespoon fresh ginger, minced

  • 8 cups chicken or vegetable stock

  • 1 tablespoon toasted sesame oil, plus more for serving if desired

  • 3 tablespoons low-sodium soy sauce

  • 4 scallions, chopped, with white and green parts separated

  • 1½ bags frozen potstickers or dumplings

  • 1 large carrot, thinly sliced into coins or ribbons

  • 2 cups fresh spinach, chard, Chinese broccoli, or baby bok choy

  • Toasted sesame seeds, chili oil, or cilantro, for serving

Instructions

  1. Sauté the Aromatics: Heat the olive oil in a large pot over low to medium heat. Add the shiitake mushrooms, garlic, and ginger. Sauté for about 2 minutes, stirring occasionally, until fragrant.

  2. Build the Broth: Pour in the chicken or vegetable stock. Add the toasted sesame oil, soy sauce, scallion whites, and sliced carrots. Bring to a boil, then reduce the heat to a simmer.

  3. Cook the Dumplings: Add the frozen potstickers or dumplings to the broth. Cover and simmer for 4–5 minutes, or follow the package directions until the dumplings are fully cooked.

  4. Add the Greens: Stir in the spinach, chard, Chinese broccoli, or baby bok choy. Cook briefly until the greens wilt or become tender.

  5. Taste and Adjust: Taste the broth and adjust the seasoning with additional soy sauce if needed.

  6. Serve: Divide the soup among bowls. Top with scallion greens, toasted sesame seeds, cilantro, chili oil, or a drizzle of sesame oil as desired.

Notes

  • Use frozen dumplings: There’s no need to thaw them first unless the package instructions specify otherwise.

  • Slice vegetables thinly: Thin carrots and mushrooms cook quickly and are easy to eat with the dumplings.

  • Keep the greens fresh: Add leafy greens near the end so they retain their color and texture.

  • Season gradually: Dumplings and stock can contain salt, so taste the broth before adding extra seasoning.

  • Check package directions: Dumpling cooking times vary by size, filling, and brand.
