These Graham Cracker Chocolate Dipped Ice Cream Sandwiches are an easy homemade frozen treat that’s perfect for warm-weather days. Creamy ice cream, crisp graham crackers, and a crunchy chocolate coating come together to create a fun dessert that feels special without requiring much effort.

Since the ice cream can be prepared ahead of time, these sandwiches are great for birthday parties, backyard barbecues, or keeping in the freezer whenever a sweet craving strikes.

Ingredients

  • 2½ pints ice cream, softened (any favorite flavor)
  • 9 graham crackers
  • Melted chocolate or Magic Shell topping

Instructions

  1. Line an 8 x 8-inch baking dish with parchment paper, leaving enough overhang on two sides to lift the ice cream out later.
  2. Spread the softened ice cream into an even layer in the prepared pan.
  3. Freeze overnight, or until completely firm.
  4. Break each graham cracker in half to make 18 squares.
  5. Lift the frozen ice cream from the pan using the parchment paper and place it on a cutting board.
  6. Cut the ice cream into 9 equal squares.
  7. If using melted chocolate, spread a thin layer onto the graham crackers and place the chocolate side against the ice cream.
  8. Sandwich each ice cream square between two graham cracker pieces.
  9. Return the sandwiches to the freezer for at least 10 minutes before serving.

Notes

  • Create perfect squares: Freeze the ice cream overnight in a parchment-lined pan, then lift it out using the paper before slicing.
  • Use Magic Shell for extra crunch: It hardens instantly against the frozen ice cream, creating a crisp chocolate coating.
  • Freeze after assembling: Return the completed sandwiches to the freezer for at least 10 minutes so they firm up before serving.
  • Mix and match flavors: This recipe works with nearly any ice cream flavor, making it easy to customize for every occasion.
