Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup brown sugar, packed
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 cup (1 stick) unsalted butter, cold and cut into cubes
- 1/4 cup honey
- 1/4 cup milk
- 1 teaspoon vanilla extract

Preheat oven
Set oven to 350°F (175°C) and line a baking sheet with parchment paper. -
Mix dry ingredients
In a bowl, whisk together flours, brown sugar, baking soda, salt, and cinnamon. -
Cut in butter
Add cold butter and mix using a pastry cutter or fingers until the mixture resembles coarse crumbs. -
Add wet ingredients
Stir in honey, milk, and vanilla until a dough forms. -
Chill dough
Wrap and refrigerate for 30 minutes to firm up. -
Roll & cut
Roll dough thin (about 1/8 inch thick) on a floured surface.
Cut into rectangles or fun shapes. -
Dock the dough
Use a fork to poke holes (prevents puffing and gives classic graham look). -
Bake
Bake for 12–15 minutes, until edges are golden and crisp. -
Cool
Let cool completely—they will crisp up further as they cool.
