Oatmeal Chocolate Chip Sea Salt Cookies

Chewy oats, plenty of chocolate chips, and a sprinkle of flaky sea salt make these cookies hard to resist. They’re crisp around the edges, soft through the middle, and just salty enough to balance all that chocolatey sweetness.

 

Ingredients

  • 1 cup unsalted butter, softened

  • 1 cup light or dark brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 2 teaspoons vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ½ teaspoon kosher salt

  • 3 cups old-fashioned oats

  • 1 (12-ounce) bag semi-sweet chocolate chips

  • Flaky sea salt, for topping

Instructions

1. Prepare the Oven

Preheat the oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat.

2. Cream the Butter and Sugars

Using a stand mixer or hand mixer, beat the softened butter, brown sugar, and granulated sugar for about 4 minutes, until light, creamy, and fluffy.

Give this step the full 4 minutes. It helps create a better cookie texture.

3. Add the Eggs

Add the eggs one at a time, mixing well after each addition.

Mix in the vanilla until combined.

4. Mix the Dry Ingredients

In a separate bowl, stir together the flour, baking soda, and kosher salt.

Gradually add the dry ingredients to the butter mixture and mix just until combined.

5. Add the Oats and Chocolate

Stir in the old-fashioned oats and chocolate chips until evenly distributed throughout the dough.

6. Shape the Cookies

Use a cookie scoop or tablespoon to portion the dough onto the prepared baking sheet.

Gently press down each cookie and finish with a few flakes of sea salt.

7. Bake

For large cookies, bake for about 18 minutes.

For smaller cookies, bake for 10–12 minutes.

The cookies are ready when the edges are golden and the centers are set.

8. Cool and Serve

Let the cookies cool briefly on the baking sheet before transferring them to a wire rack.

 

Notes

  • Use old-fashioned oats: They give the cookies plenty of chewy texture.

  • Go easy on the sea salt: A few flakes on each cookie are enough to balance the sweetness.

  • Choose your size: Make smaller cookies for snack time or larger ones when you want a bakery-style treat.
