A bright, citrus-forward muffin balanced by the natural caramel sweetness of dates and the earthy crunch of walnuts—well-structured, moist, and aromatic.

Ingredients

Scale
  • 1/2 cup orange juice
  • 1 large egg
  • 1/2 cup butter, melted
  • 1/2 cup honey
  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 cup chopped dates
  • 1/2 cup chopped walnuts

Instructions

1. Preheat & Prep

  • Preheat oven to 375°F (190°C)
  • Line or grease a 12-cup muffin tin

2. Mix Wet Ingredients

  • In a bowl, whisk:
    • orange juice
    • Egg
    • Melted butter
    • Honey

3. Prepare Dry Ingredients

  • In a separate bowl, sift together:
    • Flour
    • Baking soda
    • Baking powder
    • Salt
  • Add chopped dates and walnuts
  • Toss to coat evenly (prevents sticking and sinking)

4. Combine

  • Add dry ingredients into wet ingredients
  • Mix until just combined (do not overmix)

5. Fill & Bake

  • Divide batter evenly among muffin cups
  • Bake for ~15 minutes, or until a toothpick inserted comes out clean

6. Cool & Serve

  • Cool briefly in pan, then transfer to a rack
  • Serve warm or at room temperature

Notes

  • Chop dates finely: Ensures even distribution
  • Use fresh juice: Enhances citrus aroma and brightness
  • Avoid overmixing: Prevents dense texture
