These easy crepes are filled with creamy peanut butter and sweet fruit preserves, making a fun breakfast, snack, or lunchbox treat.

  • Total Time: 10 minutes
  • Yield: About 16 crepes

Ingredients

Scale
  • 1 recipe crepes, prepared according to recipe directions

  • Peanut butter, at room temperature

  • Fruit preserves

Instructions

  1. Prepare the crepes. Make the crepes according to your preferred recipe directions. Stack them on a plate and allow them to cool slightly.

  2. Spread the peanut butter. Place one crepe on a flat surface and spread 1 heaping tablespoon of room-temperature peanut butter over it.

  3. Add the preserves. Spread 1 heaping tablespoon of fruit preserves over the peanut butter.

  4. Repeat. Continue filling the remaining crepes using the same amounts.

  5. Roll the crepes. Carefully roll each filled crepe into a log.

  6. Slice and serve. Cut each roll into smaller pieces or serve whole.

Notes

  • Make crepes ahead: Prepare an extra batch and refrigerate the cooled crepes until ready to fill.

  • Use room-temperature peanut butter: It spreads more easily and is less likely to tear the delicate crepes.

  • Don’t overfill: Keep the filling in an even layer so the crepes roll neatly.

  • Cool before filling: Let freshly cooked crepes cool slightly to prevent the peanut butter from becoming too runny.

  • Choose your favorite preserves: Strawberry, raspberry, grape, or mixed berry all work well.
