These Vietnamese-inspired baguette sandwiches feature savory seasoned pork, crisp vegetables, tangy pickles, creamy mayonnaise, and fresh mint.

  • Total Time: 25 minutes
  • Yield: 4 sandwiches

Ingredients

Scale
  • 8 ounces ground pork

  • 1 tablespoon soy sauce

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon kosher salt

  • 8 teaspoons mayonnaise or vegan mayonnaise

  • 1 French baguette, cut into 4 sections and sliced lengthwise

  • 2 Persian cucumbers, seeds removed and grated

  • 1 large carrot, grated

  • 2 pickles, sliced into matchsticks

  • 1/2 cup fresh mint

Instructions

  1. Cook the pork. Heat a skillet or saucepan over medium heat. Add the ground pork, soy sauce, garlic powder, onion powder, and kosher salt.

  2. Brown until cooked through. Cook for approximately 5 minutes, breaking the pork into small pieces as it cooks. Continue cooking as needed until the pork reaches an internal temperature of 160°F. Remove from the heat and set aside.

  3. Prepare the baguettes. Cut the baguette into four sections and slice each section lengthwise.

  4. Make room for the filling. Use your fingers to gently remove a little of the soft interior bread from each half, creating space for the fillings.

  5. Spread the mayonnaise. Add 2 teaspoons of mayonnaise inside each sandwich.

  6. Add the fillings. Divide the cooked pork among the baguette sections. Top with grated cucumber, grated carrot, pickle matchsticks, and fresh mint.

  7. Assemble and serve. Close each sandwich and serve while the pork is warm.

Notes

  • Drain excess moisture: Grated cucumber can release liquid. Gently squeeze out excess moisture before adding it to the sandwiches.

  • Don’t overcook the pork: Break it into small pieces and cook just until done to keep the filling tender.

  • Keep the bread crisp: Assemble the sandwiches shortly before serving to prevent the baguette from becoming soggy.

  • Balance the textures: Use fresh, crisp vegetables and tangy pickles to complement the savory pork.

  • Adjust the mayonnaise: Add more or less depending on how creamy you like your sandwiches.
