These Rainbow Roll Up Sandwiches are colorful, crunchy, and packed with fresh vegetables layered over creamy hummus. Rolled tightly and sliced into fun pinwheels, they’re a healthy, kid-friendly lunch or snack that brightens up any lunchbox.

Ingredients

Wrap Base

  • ▢ 1 large tortilla or lavash bread
  • ▢ 1/3 cup hummus of choice

Rainbow Vegetables

  • ▢ 1/2 red bell pepper, thinly sliced
  • ▢ 1 small carrot, thinly sliced
  • ▢ 1/2 yellow bell pepper, thinly sliced
  • ▢ 1/4 cup fresh spinach
  • ▢ Purple cabbage, thinly sliced or finely chopped

Instructions

  • Lay the tortilla or lavash bread flat on a clean surface.
  • Spread hummus evenly across the wrap.
  • Arrange the vegetables in rainbow color order across the center of the wrap.
  • Leave a small border with only hummus around the edges to help seal the wrap.
  • Roll the wrap tightly into a log.
  • Place seam-side down for a minute to help it hold together.
  • Slice into pinwheel “coins” and serve.

Notes

Assembly Tip

The hummus acts as the “glue” that keeps the wrap sealed together, so be sure to leave some plain hummus near the edges.
