These sesame udon noodles combine chewy noodles, shiitake mushrooms, tofu, and scallions in a simple soy-sesame sauce for an easy, flavorful meal.

  • Total Time: 15 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 (9.5-ounce) package udon noodles

  • 1½ cups thinly sliced shiitake mushrooms

  • ½ cup sliced scallions

  • 1 cup cubed firm tofu

  • 2 tablespoons soy sauce

  • 2 teaspoons sesame oil

  • 2 tablespoons toasted sesame seeds

Instructions

  1. Cook the noodles. Prepare the udon noodles according to the package directions, about 4 minutes.

  2. Add the mushrooms. Add the sliced shiitake mushrooms during the last 2 minutes of cooking so they soften while the noodles finish.

  3. Drain. Drain the noodles and mushrooms thoroughly.

  4. Toss everything together. Add the tofu, scallions, soy sauce, sesame oil, and toasted sesame seeds. Toss until the noodles are evenly coated.

  5. Serve. Divide into bowls and enjoy while warm.

Notes

  • Cook in broth: Use chicken or vegetable broth instead of water to cook the noodles for extra flavor.

  • Keep the noodles chewy: Follow the package cooking time and avoid overcooking.

  • Drain well: Excess water can dilute the soy sauce and sesame oil.

  • Toss while warm: The warm noodles help distribute the sauce evenly.

  • Toast the sesame seeds: Toasted sesame seeds add a nutty aroma and extra texture.
