Fluffy oven-baked pancakes made in one batch make breakfast easy for a crowd, with customizable toppings everyone can enjoy.

  • Total Time: 25 minutes
  • Yield: 8 servings

Ingredients

Scale
  • 3 large eggs

  • 3 cups buttermilk

  • 4 tablespoons unsalted butter, melted and cooled

  • 1 teaspoon vanilla extract

  • 2 tablespoons maple syrup or honey

  • 2⅔ cups all-purpose flour

  • 1 teaspoon baking soda

  • 2 teaspoons baking powder

  • 1 teaspoon kosher salt

  • 1 tablespoon unsalted butter, for greasing the baking sheet

Optional Toppings

  • Sliced strawberries or bananas

  • Chocolate chips or dye-free chocolate pieces

  • Blueberries

  • Jam

  • Nut butter

Instructions

  1. Preheat the oven. Heat the oven to 500°F.

  2. Prepare the baking sheet. Generously grease a rimmed 13 × 18-inch baking sheet with butter. Alternatively, line it with parchment paper and grease the paper.

  3. Mix the wet ingredients. In a large bowl, whisk together the eggs, buttermilk, melted butter, vanilla extract, and maple syrup or honey.

  4. Mix the dry ingredients. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.

  5. Combine the batter. Gradually add the dry ingredients to the wet mixture, whisking just until combined. Avoid overmixing.

  6. Spread the batter. Pour the batter onto the prepared baking sheet and spread it evenly with a spatula.

  7. Add the toppings. Sprinkle your chosen toppings over the batter. Let everyone customize a section for a fun family breakfast.

  8. Bake. Place the pan in the oven and immediately reduce the temperature to 400°F. Bake for 15–16 minutes, until the pancake is puffed and just beginning to turn golden. Check that the center is cooked through.

  9. Slice and serve. Cut into squares using a knife or pizza cutter. Serve with maple syrup, raspberry sauce, honey, or chocolate drizzle.

Notes

  • Don’t overmix: A few small lumps in the batter are fine. Overmixing can make the pancake dense.

  • Spread evenly: An even layer helps the pancake bake consistently from edge to center.

  • Choose toppings strategically: Use small pieces and avoid adding too many wet toppings, which can make the pancake soggy.

  • Watch the bake: Oven temperatures vary, so check for a set center and lightly golden edges before removing the pan.
