  • 1 small yellow onion, chopped

  • 1 clove garlic, minced

  • 2 large eggs, beaten

  • 1 cup ricotta cheese (low-fat or full-fat)

  • 1/2 cup mozzarella cheese, shredded

  • 1/2 cup parmesan cheese, grated

  • 1 (10-ounce) package frozen chopped spinach, defrosted and well drained

  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat the oven:
    Preheat the oven to 350°F (175°C). Lightly grease a mini muffin pan.

  2. Cook the aromatics:
    Melt the butter in a sauté pan over medium heat. Add the chopped onion and cook for about 4 minutes, until tender.
