These savory lettuce wraps feature seasoned ground chicken or turkey cooked with garlic, ginger, and vegetables, then coated in a sweet and salty soy-honey glaze. Light, fresh, and packed with flavor, they make an easy weeknight meal or healthy lunch option.

Ingredients

Sauce

  • ▢ 1/4 cup low sodium soy sauce
  • ▢ 2 tablespoons honey
  • ▢ 2 tablespoons cilantro, chopped

Filling

  • ▢ 1 tablespoon oil
  • ▢ 1 small onion, diced
  • ▢ 1 bell pepper, chopped
  • ▢ 1 clove garlic, minced
  • ▢ 1 teaspoon minced ginger
  • ▢ 1 pound ground chicken (or ground turkey)
  • ▢ 1/4 teaspoon kosher salt

For Serving

  • ▢ 8 bibb, butter, or iceberg lettuce leaves

Instructions

  1. In a small bowl, whisk together soy sauce, honey, and cilantro. Set aside.
  2. Heat oil in a large sauté pan over medium heat.
  3. Add onion and cook for 2 minutes until softened.
  4. Add bell pepper and cook for another 2 minutes.
  5. Stir in garlic and ginger and cook for 1 minute until fragrant.
  6. Add ground chicken or turkey and cook for about 7 minutes, breaking it apart until fully cooked.
  7. Pour in the soy sauce mixture and add salt. Cook for 2 minutes, stirring, until the liquid evaporates and the filling is well coated.
  8. Spoon mixture into lettuce leaves and serve immediately.
