Ingredients
- 3/4 cup fresh strawberries, tops removed and sliced
- 1/4 cup strawberry preserves
- 1 tablespoon lemon juice
- 1 package pie dough (or homemade)
- 1 large egg, whisked (for egg wash)
Instructions
1. Preheat & Prep
- Preheat oven to 425°F (220°C).
- Line a baking sheet with parchment paper or a silicone mat.
2. Make the Filling
- In a bowl, combine strawberries, strawberry preserves, and lemon juice.
- Set aside.
3. Roll & Cut Dough
- Roll out pie dough on a floured surface.
- Cut into 4-inch circles (or preferred shapes).
4. Fill & Seal
- Place 1 heaping tablespoon of filling in the center of half the circles.
- Brush edges lightly with water.
- Top with remaining dough pieces and press edges to seal (use a fork if desired).
5. Prepare for Baking
- Transfer to prepared baking sheet.
- Poke 3–4 small holes on top of each pie.
- Brush with egg wash (optional).
6. Bake
- Bake for 15 minutes, or until golden brown.
7. Cool & Serve
- Let cool on baking sheet for 10 minutes, then serve warm or at room temperature.
Notes
- Avoid soggy pies: Use more fruit pieces than liquid filling.
- Seal: Prevents leaks during baking.
- Skip egg wash if needed: Still bakes well without it.
- Creative shapes: Try hearts, stars, or rectangles for variety.
