Super Juice is a simple homemade drink packed with leafy greens, fresh lemon juice, and a touch of natural sweetness. It’s an easy way to enjoy more vegetables in a refreshing beverage, making it a great alternative to store-bought juices.

Ingredients

Scale
  • 1½ cups collard greens, coarsely chopped
  • Juice of 1 large lemon
  • 23 tablespoons agave, or to taste
  • 2 cups water

Instructions

  1. Add the collard greens, lemon juice, agave, and water to a blender.
  2. Blend on high for about 1 minute, or until completely smooth.
  3. Pour into glasses and serve immediately.

Notes

  • Sweetness: Adjust the agave to taste depending on the tartness of the lemon. Honey or maple syrup can also be substituted.
  • Greens: Kale or spinach can be used instead of collard greens for a slightly milder flavor.
  • Storage: Store in a sealed container in the refrigerator for up to 2 days. Shake or stir well before serving, as natural separation will occur.
