This sweet gingery tofu is packed with savory, tangy flavor and a hint of sweetness. Baked until golden, the tofu makes an easy vegetarian dinner with plenty of flavor and very little fuss.

  • Total Time: 1 hour
  • Yield: 4 servings

Ingredients

Scale
  • 1 pound firm or extra-firm tofu, drained

  • ¼ cup mirin

  • ¼ cup rice vinegar

  • 2 tablespoons low-sodium soy sauce or liquid aminos

  • 2 tablespoons honey

  • 2 tablespoons fresh ginger, minced

  • 2 tablespoons sesame oil

  • 1 garlic clove, minced

  • Sesame seeds, for garnish

Instructions

1. Prepare the Tofu

Preheat the oven to 350°F.

Wrap the tofu in a clean kitchen towel and gently press to remove as much excess water as possible.

Cut the tofu into even ½-inch slices.

2. Make the Marinade

In an 11 × 7-inch baking dish, combine the mirin, rice vinegar, soy sauce or liquid aminos, honey, ginger, sesame oil, and garlic.

Stir until well combined.

3. Marinate the Tofu

Place the tofu slices in the baking dish and gently turn them to coat both sides with the marinade.

4. Bake

Bake for 40–45 minutes, or until the tofu is golden and the edges are slightly caramelized.

5. Finish and Serve

Sprinkle the baked tofu with sesame seeds and serve warm.

Notes

  • Press the tofu well: Removing excess water helps the tofu absorb more of the flavorful marinade and brown nicely.

  • Cut evenly: Similar-sized slices will cook at roughly the same rate.

  • Don’t rush the bake: The longer bake helps the tofu develop a golden, flavorful exterior.

  • Make the sauce ahead: Mix the marinade earlier in the day and keep it refrigerated until you’re ready to assemble.
