Ingredients
- 8 tostada shells
- 1/2 cup guacamole
- 2 cups chopped lettuce
- 2 cups cooked chicken, finely chopped
- 1 cup black beans, rinsed and drained
- 2 small tomatoes, diced
- 1/2 cup grated cheddar cheese or Mexican cheese blend
- 1/2 cup sour cream
- Salsa, optional
Instructions
- Place one tostada shell on a plate.
- Spread about 1 tablespoon of guacamole over the tostada.
- Layer with lettuce, chicken, black beans, tomatoes, and cheese.
- Place another tostada on top and repeat the layers.
- Finish with a dollop of sour cream and salsa, if desired.
- Repeat with the remaining tostadas and ingredients, then serve immediately.
Notes
- Keep it crunchy: Don’t assemble the tostadas too far in advance. The toppings can make the shells soft.
- Make it vegetarian: Skip the chicken and add extra black beans, pinto beans, or your favorite cooked vegetables.
- For picky eaters: Serve the toppings separately so everyone can choose what goes on their tostada.
- Serving idea: For younger kids, break the tostada into smaller pieces and serve the toppings alongside it for easier eating.
