Turn Thanksgiving leftovers into an easy lunch with this simple turkey and cranberry bagel sandwich. Juicy turkey, sweet-tart cranberry sauce, crisp greens, and creamy mayo make every bite feel like a fresh take on the holiday meal.

Ingredients

  • 1 bagel of your choice

  • 2 pieces leftover turkey breast

  • 2 tablespoons cranberry sauce

  • 2 tablespoons sprouts, microgreens, or lettuce

  • 1 tablespoon vegan mayonnaise or regular mayonnaise

Instructions

1. Toast the Bagel

Slice the bagel in half and toast until lightly crisp.

2. Add the Mayo

Spread the mayonnaise evenly over the cut sides of both bagel halves.

3. Layer the Sandwich

Place the turkey on one half of the bagel. Add the cranberry sauce, followed by the sprouts, microgreens, or lettuce.

4. Finish and Serve

Top with the other half of the bagel, slice if desired, and serve.

Notes

  • Use cold leftovers: This sandwich is designed for leftover turkey straight from the refrigerator.

  • Adjust the cranberry: Add more or less cranberry sauce depending on how sweet you like your sandwich.

  • Add some crunch: Sprouts and lettuce both work well, but you can also use whatever greens you have on hand.
