Ingredients
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1 (2-inch) piece fresh turmeric, peeled and thinly sliced
- 2 bunches kale, spinach, or Swiss chard, thinly sliced
- 1/4 teaspoon kosher salt
- 2 tablespoons water
Instructions

Heat the oil
In a large saucepan, heat the olive oil over medium heat. -
Sauté aromatics
Add the minced garlic and sliced turmeric. Sauté for about 30 seconds, until fragrant. -
Add the greens
Stir in the sliced greens and sprinkle with salt. Sauté for about 1 minute. -
Steam the greens
Add the water to the pan and continue cooking, stirring occasionally, until the greens are just wilted and tender. -
Serve
Remove from heat and serve warm as a simple, healthy side dish.
Notes
- If fresh turmeric isn’t available, substitute 1/2 teaspoon ground turmeric.
- Add a squeeze of fresh lemon juice before serving for brightness.
- Sprinkle with toasted sesame seeds or chili flakes for extra flavor.
- This dish pairs well with rice bowls, grilled fish, tofu, or roasted vegetables.
