Turmeric Sautéed Greens are a quick and nutritious way to incorporate turmeric into everyday cooking. Fresh turmeric and garlic create a fragrant base, while leafy greens like kale, spinach, or Swiss chard cook down into a tender, flavorful side dish. This recipe is simple, vibrant, and packed with nutrients, making it a perfect addition to weeknight meals.

Ingredients

  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1 (2-inch) piece fresh turmeric, peeled and thinly sliced
  • 2 bunches kale, spinach, or Swiss chard, thinly sliced
  • 1/4 teaspoon kosher salt
  • 2 tablespoons water

Instructions

  1. Heat the oil
    In a large saucepan, heat the olive oil over medium heat.

  2. Sauté aromatics
    Add the minced garlic and sliced turmeric. Sauté for about 30 seconds, until fragrant.

  3. Add the greens
    Stir in the sliced greens and sprinkle with salt. Sauté for about 1 minute.

  4. Steam the greens
    Add the water to the pan and continue cooking, stirring occasionally, until the greens are just wilted and tender.

  5. Serve
    Remove from heat and serve warm as a simple, healthy side dish.

Notes

  • If fresh turmeric isn’t available, substitute 1/2 teaspoon ground turmeric.
  • Add a squeeze of fresh lemon juice before serving for brightness.
  • Sprinkle with toasted sesame seeds or chili flakes for extra flavor.
  • This dish pairs well with rice bowls, grilled fish, tofu, or roasted vegetables.
