These colorful tortilla rollups combine creamy hummus, crisp vegetables, and whole wheat tortillas for an easy, nutritious meal or snack.

  • Total Time: 10 minutes
  • Yield: 4 rollups

Ingredients

Scale
  • 1/2 cup hummus

  • 4 whole wheat tortillas

  • 1 medium carrot, peeled and grated

  • 1 Persian cucumber, sliced into sticks

  • 1/2 small red bell pepper, sliced into sticks

Instructions

  1. Prepare the tortillas. Lay one whole wheat tortilla flat on a clean work surface.

  2. Spread the hummus. Spread approximately 2 tablespoons of hummus evenly over the tortilla, leaving a little space around the edges.

  3. Add the vegetables. Arrange one-quarter of the grated carrot, cucumber sticks, and red bell pepper sticks on one half of the tortilla, close to the edge.

  4. Roll it up. Fold the sides inward slightly, then roll the tortilla tightly like a burrito to keep the filling in place.

  5. Repeat. Prepare the remaining three tortillas using the same method.

  6. Slice and serve. Serve whole or cut each rollup into smaller pinwheels for easy eating.

Notes

  • Avoid overfilling: Too many vegetables can make the tortillas difficult to roll.

  • Keep the vegetables dry: Pat the cucumber sticks dry to prevent soggy tortillas.

  • Spread evenly: A thin, even layer of hummus helps the filling stay together.

  • Roll tightly: Keep the vegetables close to one edge and tuck them in as you roll.

  • Use fresh tortillas: Softer tortillas are easier to fold without cracking.
