The “Gluten-Free & Luscious” Polenta Lasagna

When you’re tasked with whipping up a classic comfort food dish for a healthy, “lasagna-loving” family without relying on traditional wheat pasta, sometimes the best solution is leaning into a naturally gluten-free base. This Polenta Lasagna combines hearty slices of polenta with layers of luscious red sauce, creamy ricotta, and irresistible mozzarella cheese right at home. It’s a “wholesome” twist that had the in-house testers absolutely thrilled—to the point where one could barely hear a muffled “pass another slice” through bites of warm, cheesy goodness!

Why This Recipe Wins

  • Gluten-Free Power: By swapping out standard wheat noodles for a tasty canvas of sliced polenta, the dish provides a “filling and tasty” vegetarian dream come true that everyone can safely enjoy.
  • Dinner Surprise: Moving away from a “standard tedious routine” of typical pasta bakes turns an ordinary weeknight into a “special holiday” event that makes a memorable potluck centerpiece for 8 people or more.
  • Naturally Cheesy & Rich: Balancing the robust red sauce with creamy ricotta and gooey mozzarella provides a “rich yet robust” flavor profile that turns into perfection in every single bite.
  • Make-Ahead Ease: These “kid-approved portions” can be assembled entirely the day before, making it an ideal choice for an effortless weeknight dinner or a stress-free get-together with friends.

What You’ll Need

  • The Gluten-Free Canvas: Prepared polenta (the secret to a sturdy, naturally gluten-free base that soaks up flavor beautifully).
  • The Luscious Sauce: Your favorite jar of red sauce from the market (or homemade marinara if you have the time!).
  • The Creamy Layer: Whole milk ricotta cheese, seasoned with a pinch of salt and pepper.
  • The Gooey Melt: Shredded mozzarella cheese to create that irresistible, stretchy blanket on top.
  • The Fresh Finish: Fresh basil leaves or chopped parsley for a bright herbal garnish.

How to Make It

  • The Polenta Slice: Cut the prepared polenta into even rounds so they layer perfectly in the baking dish and don’t remain “perfectly crisp” and hard to bite through.
  • The Ricotta Mix: In a small bowl, stir the ricotta cheese “thoroughly, but gently” until it looks completely “velvety smooth” and spreadable.
  • The Layering: Spread a thin layer of red sauce in the bottom of a large baking dish, then layer the sliced polenta, creamy ricotta, and mozzarella cheese, repeating until the dish is full.
  • The Golden Bake: Bake at 375°F until the sauce is bubbling up the sides and the top layer of cheese takes on a gorgeous, melted “golden-brown” finish.
  • The Plate: Let the casserole rest for a few minutes to set up, then slice and serve for a comforting, “mess-proof” masterpiece!

Get the Kids Involved: The “Polenta Squad”

Since layering slices and spreading cheese is super interactive, this is a “ton of fun” for kids to help assemble and enjoy.

  • Ages 3–5: Let them be the “Cheese Sprinklers.” They can help scatter handfuls of mozzarella over the top of the dish, practicing their “precision.”
  • Ages 6–9: Have them help as “The Polenta Placers.” Show them how lining up the yellow polenta rounds to cover the sauce creates a “scrumptious” and sturdy pasta-free foundation.
  • Ages 10+: Let them lead the “Ricotta Spreading.” Under supervision, they can use the back of a spoon to spread the cheese layers and look for the “magic bubble” as the lasagna bakes in the hot oven.

Tips for Success

  • Let it Rest: If you slice the lasagna directly out of the oven, the layers will slide apart and collapse. Letting the dish rest for 10 to 15 minutes before serving is imperative to achieve that “tender and rich” bite that holds its shape beautifully on the plate.
  • Generous Sauce is Crucial: The goal is a luscious, moist bake, so making sure you have plenty of red sauce ensures the polenta stays “refreshing and light” rather than drying out during cooking.
  • The Prep-Ahead Trick: One can make a “huge batch” of this the day before, covering it tightly in the fridge so you only have to pop it in the oven for a “quick and easy” dinner when company arrives!

Dinner Note: Mark my words! Offering a naturally gluten-free option that tastes exactly like classic comfort food makes hosting a potluck a “quick and easy” win that pleases every single guest.

  • Variation: For a “decadent and indulgent” twist, fold browned Italian sausage or sautéed spinach into the red sauce, or explore other fun family favorites like the classic 12 Layer Lasagna or Crock Pot Mexican Lasagna to elevate your casserole rotation even further.

Serve & Savor

The Polenta Lasagna is a “tantalizing taste sensation” that proves gluten-free and vegetarian bakes can be “out of this world” luscious and comforting. It’s a “versatile” recipe that turns a simple tube of polenta into a “memory-making” family favorite.

This gluten-free vegetarian lasagna layers tender polenta, spinach, zucchini, roasted peppers, creamy ricotta, and melted mozzarella in rich marinara sauce.

  • Total Time: 1 hour 35 minutes
  • Yield: 8 servings (one 9 x 13-inch dish)

Ingredients

Scale
  • 2 tablespoons extra-virgin olive oil

  • 4 garlic cloves, minced

  • 3 (10-ounce) bags baby spinach

  • 2 zucchini, cut into ½-inch coins

  • 1 teaspoon salt, divided

  • 2 cups ricotta cheese

  • 2 large egg yolks

  • ¼ teaspoon freshly grated nutmeg

  • 1 (18-ounce) tube cooked polenta, sliced into 24 pieces

  • 4 cups (32 ounces) marinara sauce

  • 1 (12-ounce) jar roasted red peppers, chopped

  • 1 cup grated Parmesan cheese

  • 1 pound fresh mozzarella, thinly sliced

Instructions

  1. Preheat the oven. Heat the oven to 375°F.

  2. Cook the spinach. Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.

  3. Wilt the spinach. Add half of the spinach and half of the salt. Cook for about 3 minutes, until wilted. Add the remaining spinach and cook for another 3 minutes.

  4. Drain the vegetables. Transfer the spinach to a colander and press gently to remove as much excess liquid as possible.

  5. Cook the zucchini. Add the zucchini coins to the same skillet and cook for about 3 minutes. Transfer to the colander and drain off excess liquid.

  6. Prepare the ricotta mixture. In a small bowl, combine the ricotta, egg yolks, nutmeg, and remaining salt. Stir until smooth.

  7. Start layering. Spread 1 cup of marinara sauce across the bottom of a deep 9 × 13-inch baking dish. Arrange half of the polenta slices over the sauce.

  8. Add the first layer of filling. Spread half of the spinach and zucchini mixture over the polenta, followed by half of the roasted red peppers.

  9. Continue layering. Add half of the remaining marinara, half of the ricotta mixture, half of the mozzarella, and half of the Parmesan.

  10. Repeat the layers. Use the remaining polenta, vegetables, roasted peppers, marinara, ricotta, mozzarella, and Parmesan to create a second layer.

  11. Bake covered. Cover the baking dish with foil and bake for 30 minutes.

  12. Finish uncovered. Remove the foil and bake for another 15–20 minutes, until heated through and the cheese is melted and bubbly.

  13. Rest and serve. Remove from the oven and let the lasagna rest for 10 minutes before slicing and serving.

Notes

  • Drain the spinach thoroughly: Spinach releases a lot of moisture. Removing excess liquid helps prevent watery lasagna.

  • Cook the zucchini first: Briefly sautéing and draining the zucchini helps keep the layers from becoming soggy.

  • Slice polenta evenly: Consistent slices make layering easier and help the lasagna heat evenly.

  • Use a deep baking dish: The multiple layers need enough room without spilling over.

  • Let it rest: Resting for 10 minutes helps the layers settle, making cleaner slices.
